Saturday morning pancakes!

It’s nearly 60 degrees outside. It’s Saturday morning, and tomorrow is a Moon Day. What can make this day any better? Pancakes! These yummy pancakes are both toddler-friendly and low in sugar, not to mention a perfect complement to Eric Carle!

Super Simple Pancake Recipe
Serves 3 (at least 2 adults and one toddler)

1 Cup Flour (whole wheat or white)
1 tablespoon baking power
1 teaspoon baking soda
1/4 cup sugar
1 cup plain yogurt
1 egg

Optional mix-ins (though we do not): chocolate chips, blueberries, cranberries, apple, or about anything else you like with your pancake.

Combine dry ingredients (flour, baking powder, baking soda, and sugar)  in a medium size bowl and mix. Combine  plain yogurt and egg in a large bowl and beat together. Slowly mix in the dry ingredients.  Heat a skillet to medium heat. I usually put a small amount of olive oil on a cast iron skillet and wait until it is piping hot. Then I add about 1/4 cup for each pancake.

Top pancakes with some powdered sugar and serve! Yum! Happiness!
